Homemade energy bars, bites, and balls are having quite a moment right now. And why not? They are packed with plenty of protein, feature healthy fats and just a touch of sugar. This makes them perfect for when you need to grab something to eat in a hurry, or need a little pick-me-up throughout the day. Plus, they are so easy to make at home, and they freeze well so you can make a big batch in advance.

But the best part about making these energy bites at home is that you can customize the ingredients to your liking. So it comes as no surprise that we put ground Charleston Coffee Roasters coffee into our energy bites! Freshly ground coffee is a great addition to baked goods (or in this case, no-bake treats), and adds that delicious smooth flavor that you love about our coffee. Just be sure that the grounds are fresh and dry, that is, you haven’t used them to brew coffee.

As to which of our roasts to use, you can certainly use your favorite. Or give one of our lighter roasts a try, like our Tanzanian Peaberry or the El Salvador “La Esperanza”. These roasts will add light citrus notes to your energy bites.

In addition to the coffee grounds, we use cooked quinoa and ground flax seed in the bites. You could also substitute another cooked whole grain, or use uncooked oats as well if you like. Dried cranberries add a touch of sweetness to the bites, which is a perfect complement to the coffee. Feel free to add chocolate chips too! And finally, to hold them together, we added peanut butter and honey, you can use whatever nut butter and sweetener your like to make them your way.

 

COFFEE, QUINOA AND PEANUT BUTTER ENERGY BITES

About 8-10 bites

1 cup cooked quinoa
1/4 cup unsweetened coconut
1/4 cup ground flax seed
1/4 cup dried cranberries
1 tablespoon ground Charleston Coffee Roasters coffee
1/2 cup creamy peanut butter
1-2 tablespoons honey
Pinch of salt
Cooking spray

  1. Stir together quinoa, coconut, flax seed, cranberries and coffee in a medium mixing bowl.
  2. Add the peanut butter, honey and pinch of salt and stir again until well combined.
  3. Spray hands with cooking spray, and roll mixture into 1-inch balls. Place balls on a cookie sheet and refrigerate until firm. Once firm, place balls in a sealed container, and either keep in refrigerator for up to a week. Or freeze for up to a month.
